Produce is a general term that refers to fruits and vegetables produced on a farm, which are sold to the public in their fresh, uncooked state. In the retail environment, produce is often separated into three categories: vegetables, fruits, and herbs. Vegetables are further segmented into cooking vegetables, and salad vegetables. Cooking vegetables include broccoli & cauliflower, asparagus, onions, leeks & garlic, potatoes, peas, beans, corn, and squash.
